If you’ve never tried homemade mayo, you’re in for a treat! It’s ultra creamy and so much tastier than store-bought mayo. Trust me, you’ll never go back to store-bought versions again.
Homemade Mayo
Ingredients
- 1 cup avocado oil (or other light-flavored oil)
- 1 large egg
Optional
- 1 garlic clove minced
- 1 teaspoon freshly squeezed lemon juice
- 2 teaspoons mustard powder
- Kosher salt to taste
Instructions
- Pour the oil into a wide-mouth glass jar with an opening a little bit wider than the head of your immersion blender. Crack the egg into the oil and let it settle on the bottom of the jar.
- Place the immersion blender in the jar and position the blade directly over the egg yolk. Turn the immersion blender on low and hold in place, with the blender running, until the ingredients at the bottom of the jar start to turn into a creamy emulsion, about 10 seconds.
- Start lifting the blender up a bit and pressing it back down, bringing the mixture above the mayo at the bottom into the emulsion, bit by bit, until you reach the top and the entire jar is emulsified.
- You can turn this into a more traditional mayonnaise by blending in the optional ingredients.
