Maple Roasted Butternut Squash
Ingredients
- 1¼ pounds prepared/packaged and cubed butternut squash
- ½ tablespoon extra-virgin olive oil
- 2½ tablespoons pure maple syrup
- Kosher salt and freshly ground black pepper to taste
Instructions
- Preheat the oven to 400oF.
- In a large bowl, toss the butternut squash with the oil, maple syrup, salt, and pepper. Place in a baking dish, cover with foil and roast in the center of the oven for 25 minutes.
- Remove foil, turn the squash, and bake an additional 15 minutes, or until fork tender (time will vary depending on the size you cut the squash).
