Start your day with these fluffy, protein-packed pancakes that are as delicious as they are nutritious. Top with fruit and nut butter for a breakfast that keeps you energized and satisfied all morning long.
Protein Pancakes
Ingredients
- 1 cup old-fashioned rolled oats
- 1 banana
- 2 eggs
- ½ cup egg whites
- 1 teaspoon baking powder
- Pinch of salt
- Pinch of cinnamon
- 1-2 scoops protein powder about ¼ cup, or 29 grams
- 2 tablespoons flax meal
- Blueberries optional
- Peanut butter for topping, optional
Instructions
- Run everything through the blender (except the blueberries and peanut butter) on medium low speed until very well mixed.
- Heat a nonstick griddle to medium high heat. Add batter in small circles – about ¼ cup per pancake. Sprinkle with blueberries, if using. When the edges start to look dry (2 to 3 minutes), flip and cook another minute or two on the other side.
- Top pancakes with peanut butter, if desired.
