Ingredients
  

  • 16 ounces premade fresh cauliflower rice
  • 1 tablespoon extra-virgin olive oil
  • 3 garlic cloves chopped
  • ½ teaspoon kosher salt
  • 2 teaspoons parsley chopped
  • 1 teaspoon lemon juice

Instructions
 

  • Preheat the oven to 425oF.
  • Spray a large baking sheet with olive oil cooking spray.
  • Combine the riced cauliflower, olive oil, garlic, and salt on the prepared baking sheet, spread out in a single layer, and roast in the oven 25 minutes, mixing halfway until golden.
  • Remove from the oven and top with fresh lemon juice and parsley.
