Roasted Cauliflower Rice with Garlic and Lemon
Ingredients
- 16 ounces premade fresh cauliflower rice
- 1 tablespoon extra-virgin olive oil
- 3 garlic cloves chopped
- ½ teaspoon kosher salt
- 2 teaspoons parsley chopped
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 425oF.
- Spray a large baking sheet with olive oil cooking spray.
- Combine the riced cauliflower, olive oil, garlic, and salt on the prepared baking sheet, spread out in a single layer, and roast in the oven 25 minutes, mixing halfway until golden.
- Remove from the oven and top with fresh lemon juice and parsley.
