Cilantro Lime Cauliflower Rice
Ingredients
- 16 ounces premade fresh cauliflower rice
- 2 tablespoons extra-virgin olive oil or avocado oil
- ½ cup yellow onion diced
- 1 garlic clove minced
- 1 teaspoon sea salt
- Freshly ground black pepper to taste
- 3 tablespoons fresh cilantro chopped
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest or to taste
Instructions
- Heat oil in a large skillet over medium heat. Once hot, add onions and garlic, and cook until fragrant, about 5 minutes.
- Add fresh cauliflower rice and cook for 6 to 7 minutes until warmed.
- Add salt, pepper, cilantro, lime juice, and lime zest.
- Serve immediately.
