Roasted Sweet Potatoes

Ingredients
  

  • 2 large sweet potatoes (1½-2 pounds) peeled (if desired) and cubed
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon chili powder

Instructions
 

  • Preheat the oven to 400oF.
  • Scrub, peel, and cube the potatoes into 1-inch cubes.
  • Combine olive oil with salt, smoked paprika, garlic powder, paprika, and chili powder.
  • Toss the potatoes with oil-spice mixture.
  • Place on a parchment-lined baking sheet and roast for 25 to 30 minutes, until tender and crispy.
